In 1982 after an extensive search for the perfect California vineyard property, Sir Peter Michael purchased a 630-acre parcel just north of Calistoga consisting of volcanic ridges along the western face of Mount St. Helena. The first red Bordeaux grapes were planted a year later, and the legend of the Peter Michael Winery began. The winery is focused on producing world-class single vineyard wines in the Old World style that concentrate on depth, balance, elegance, and structure. From the beginning, Sir Peter’s goals were three-fold: “One, the vineyard terroir would be the single most important feature. Two, the wines would be elegant rather than overstated. Three, there would be a hundred-year commitment to the development of a great estate.” Although these goals are evident in all Peter Michael wines, they reach even higher peaks in Les Pavots. This flagship Bordeaux style blend is comprised of 63% Cabernet Sauvignon, 23% Cabernet Franc, 12% Merlot and a touch of Petit Verdot. 2005 was the second in a string of four exceptional vintages in the North Coast wine growing area. Each vintage expressed its own personality and 2005 was perhaps the most elegantly structured of all. Extraordinary depth, balance, style, and luxurious mouthfeel were all descriptors associated with the vintage and Les Pavots expresses these characteristics in classic style. Rated by Parker at 95 points on release, this memorable wine has continued to develop beautifully in the bottle over the last decade to classic levels expressing the breed of the vineyard and the vintage. The signature of Les Pavots is quite evident in this bottling and truly unique in the world of California’s best wines. Sir Peter Michael and Lady Michael purchased 630 acres of volcanic ridges on the western face of Mount St. Helena in Knights Valley in 1982, after a six-year search. Drawing inspiration from the great wineries of Burgundy and Bordeaux, the family hired like-minded viticulturists and winemakers to help them create terroir-driven wines that would stand the test of time. Peter Michael Winery is dedicated to the production of handcrafted artisanal wines that reflect the terroir of the individual vineyards.
The 2007 Les Pavots, a Bordeaux varietal blend of 70% Cabernet Sauvignon, 17% Cabernet Franc, 10% Merlot, and 3% Petit Verdot, is brilliant. Its opaque purple color is accompanied by gorgeously complex aromas of melted chocolate, espresso roast, blackberries, and cassis. Full-bodied with a superb texture, a subtle note of oak, and fabulous concentration, it is more reminiscent of a Right Bank Bordeaux than one expects with this much Cabernet Sauvignon in the blend. Rumored about by every obsessive food-lover, it’s always described as “that secret Japanese steak house on Pico.” Totoraku is Yakiniku cuisine. Yakiniku, meaning “grilled meat”, is a Japanese term which, in its broadest sense, refers to grilled meat dishes. What’s the attraction? Certainly, it’s not the atmosphere, which is a deceiving storefront on Pico Boulevard. It looks closed and gated, although there is an “A” health rating in the window…but if you knock on the door and mention the name of your host, the charming Japanese woman (Shizumi, wife of the chef) opens the door, holds the curtain aside, and you enter.
When he opened Totoraku, Chef/owner Kaz Oyama decided to pay homage to the secret restaurants his parents took him to as a child in Japan… no signs, no reservations, entry just by invitation, very special food. Now Kaz serves a kaiseki or multiple course meal of beef, a third of it raw, the rest cooked yakiniku style. There is no website, Twitter, Facebook, Open Table. No email, no walk-ins. The only way to get in is to call the private number on the card which Kaz gives to favored customers and their select friends… and to get a card at the end of your meal from the smiling, black-haired energetic Kaz is the ultimate sign of acceptance.

It was a warmer than normal vintage producing wines of more opulence and early drinking pleasure but still possessing all the needed elements for long-term aging. All the known critics (except Robert Finigan) lined up and extolled the virtues of the vintage and its wines. In 2008, Nicholas Faith wrote in Decanter magazine that, “1982 was viewed by many as the greatest vintage of modern times. From that vintage, the US got its taste for En Primeur and the Bordelais discovered ripeness.” Prices skyrocketed in the Futures (En Primeur) market and the rush was on to own whatever the market was able to offer. On release prices and demand continued to soar; the same situation we see today. 2014 Cayuse Syrah Armanda Vineyard 2015 Cayuse Syrah Cailloux Vineyard 2014 Cayuse Camaspelo – Walla Walla Red Wine 1 3.0L each (3 total) Etched, Hand-painted and Signed Proprietor and winemaker Christophe Baron traveled from his native France to happen on to the little-known town of Walla Walla, falling in love with a few acres of what was considered at the time “useless stone-covered farmland.” While everyone in the neighborhood continued to mock Christophe’s decision, he quietly turned this piece of neglected farmland into one of the country’s most prized vineyards and the source of some of its most highly acclaimed wines. The rest is history as Cayuse remains one of the most sought-after producers and the source of a dozen or more individual bottlings each year that are sold only as futures to avid mailing list customers. The list is full, and the wait is endless to grab a spot, so for most wine lovers, the secondary market and soaring prices remain the only opportunity to garner any Cayuse. Chateau Pavie is classed as a Premier Cru Classe “A” – the top echelon in the hierarchy of St. Emilion on the Right Bank of Bordeaux. The vineyards were originally planted by the Romans as were those of neighboring Ausone. Yet, its history and fame date back to the mid-19th century where in 1850, the “Bordeaux bible” of the day, published by Cocks and Feret, declared in their 1850 first edition that Pavie “is one of the First Classed Growths in St. Emilion.” High praise indeed and the fame continues today. 1988 was the first of three striking vintages of Bordeaux and awarded **** by Michael Broadbent in his “The New Great Vintage Wine Book” where he also awarded Pavie with ****. Of the three back-to-back vintages of 1988 through 1990, 1988 was the most elegant and difficult to understand given its original backward nature that began to bloom differently than the more powerful 1989s and more fruit forward opulent 1990s.
